Perfect way to make a Healthy Salad

Dice 1 bowl of pumpkin, 1 bowl of brussels sprouts, 1 bowl of broccoli florets, mix these in a bowl with salt, pepper and little bit of olive oil. Lay it on the oven tray and let it roast for about 15-20 mins.

Avocado dressing

In a grinder, add 2 avocado pulp, salt and pepper, ½ lemon juice, and 3 tbsp of olive oil – grind it to the paste.

Take a big bowl full of baby spinach leaves, lay all the roasted veggies, top it up with the dressing generously. Serve warm salad.
