How to make a veg pasta in red sauce?
Take 12-14 tomatoes, half of them chopped, half of them blanched and pureed, Take 4-6 onions, cut in 1/4inch size, chop 8-10 garlic cloves, heat 2 tbsp of olive oil, saute onion and garlic until tender. Add tomatoes to onions, let it cook for a while, add salt, bit of vinegar, Italian herbs, tobasco sauce and chilli flakes and some black pepper.
Take half cup each of Broccoli, onions, corn kernels, capsicums, zucchini, carrots, beans, mushrooms, baby corns cut in small squares, saute them all together for 3-4 mins in 1 tsp of oil. Add salt and pepper to taste.
Choice of pasta, cook in boiling water for 10-20 mins with salt.
Mix all of the above and toss.
